Whats for Dinner?

Been slaving for 90 minutes over tonight's dinner. Now, everything gets to rest for an hour before I go back to it. I'll take pics when it's done.

Personal beef wellingtons, with parsnip patties on the side. Incredibly, the parsnip patties are more work than the wellingtons. Gotta boil the parsnips, mash them, saute finely minced onions in butter, add butter and flour to the onions and make a roux, add milk to turn into onion gravy, add to parsnips, form into patties, dust with bread crumbs, let rest, and then fry in butter. But they're gonna be glorious ;)
 
My brother and his girlfriend stayed with me last week. He bought sone groceries for the house in that time. So tonight I'm eating like a 28 year old manchild. Oven fries and a Velveeta grilled cheese on white styrofoam bread.

Homemade peanut butter and sriracha cookies from scratch. Weird and fantastic tasting, according to my wife.
 
Sriracha...cookies? With peanut butter?




How does that even work?
That was the face my wife made...until she tasted one. I eat sriracha all the time with thai dishes that have peanut sauce, so I knew it'd go well together ;)

Sriracha Peanut Butter Cookies
Makes 60 cookies
Ingredients
• 1 cup (2 sticks) butter, softened
• 1½ cups peanut butter
• 1 cup sugar
• 1 cup brown sugar, packed
• ¼ c Sriracha
• 2 Eggs
• 1 tsp Vanilla extract
• 3 cups All-Purpose Flour
• 1 teaspoon Baking Powder
• ½ teaspoon Salt
• 1½ teaspoons baking soda
• Small bowl with about 1/8 c granulated sugar (for dipping)

Instructions
• Cream together butter, peanut butter and sugars.
• Slowly add in sriracha, eggs and vanilla. Beat until combined.
• In another bowl mix together flour, baking powder, baking soda and salt.
• Gently whisk flour into peanut butter mixture until well combined.

(If using a Kitchen Aid, you can just slowly add the above ingredients after creaming in the same order listed, keeping the mixer on 1 or 2 the entire time, until the batter comes together)

• Place batter into refrigerator for one hour to firm up.
• Pre-heat oven to 375 degrees.
• Roll dough into approx sixty (60) 1" sized balls.
• Dip into granulated sugar and place onto cookie sheet, sugar side up.
• Press each ball with a fork to make a cross pattern.
• Bake for 8-10 minutes or just until the cookies begin to brown on the edges.
• Cool on wire racks

Was gonna say...haven't you ever had satay sauce? Peanut butter has a long and storied history of being combined with chili peppers, just like chocolate and chili peppers.

Used up the last of the Xmas ham tonight with a batch of ham & linguine (linguine, mushrooms, ham bits, in a cream basil sauce). Think we got 5 family meals out of it all told.
