Whats for Dinner?

I marinade in a 2:1 ratio of Worcestershire and Louisiana hot sauce, then on the grill I hit each side with Weber's Chicago seasoning. Today I subbed the Weber for a chili powder my friend makes from scratch. Outside was a little darker than usual but it had a nice kick.

Hot dogs, burgers, chicken with my own bbq sauce, grilled corn, baked beans, fruit salad, and lemonade. It was lunch and leftovers will be dinner. Invited my neighbor to come over since her husband is away. Put the inflatable pool out for the kids to play in (parking for the beaches is ridiculous) and we're going to go see fireworks tonight. Gob less 'murica!
 
Dinner at IJ Canns on a date with my wife.

We started with a lemon and artichoke soup. So delicious! Rich and creamy but with a bright undercurrent of fresh lemon that kept it from being too heavy.

My wife had the hazelnut crusted chicken with spinach cream sauce. So rich and yummy with a side of squash medallions that were perfectly al dente.

I had the chicken picatta with extra capers. I love those little briny bits all throughout my angel hair pasta, and they did not disappoint. The chicken melted in my mouth, and they gave me plenty of capers to mix into the pasta portion of the dish.

We're both fat and happy with food babies. :)
 
Looking for a recipe? Try this one out. It's awesome.

- Only 1 chicken breast per person ('ANADA!). Rub some salt and lemon pepper. 1/4 teaspoon is fine. Skillet it with some canola oil (veggie/EVOO is fine). Make sure it's cooked as it should. Remove and keep it warm.

- 2 strips of bacon. You know how to do cook it. Dry it on some paper towels. Nice and crunchy.

- Reserve about 2 tablespoons of that sexy bacon dripping in that skillet. Slice up a large onion and put it in skillet. Add 1/4 cup of brown sugar. Cook until soft. Stir frequently.

- Cook some rice (your favorite rice). If you want to eat healthy. Half that rice, replace with steamed veggies.

- Have half 1/2 a cup of strong cheddar, monty jack around. Shredded the way Enron likes it.

- Place one chicken breast on your plate. Top with 2 slices of bacon. Just 2. Don't exaggerate. Put a reasonable amount of onion/brown sugar goodness on top of that. Put handful of cheese on that.

Pizza! But lunch was spectacular: garlic shrimp, chow fun, eggplant & tofu, beef w/ broccoli, fresh watermelon, and haupia pie - all for a friend's birthday.
 
Last night was homemade teriyaki chicken and pork, egg rolls, and shrimp fried rice. Tonight is pork chops braised/basted in enchilada sauce with cheese melted across the top, and black beans n' rice.
 
Fair food time.

Hot dogs, baked beans (sorry, Gas, they're Van de Kamp's), Funnel Cakes with an hors d'ouvre of Cheese Curds from the Optimist Club booth.
 
A lovely rare burger, with an assortment of greens and homegrown tomatoes on an English muffin. Felt awkward to eat as any burger without a standard bun, but still delicious.
 
Last night we had some striploins with a rub we saw on Food Network Star. Lenny's rub! Very easy, but very tasty:

1 Part Coffee Grounds (I used instant)
1 Part Seasoning Salt (Lowry's)
1 Part Sugar

That's it. And it was good. Just had some baked potatoes and some mixed greens with it for an "easy" meal.

That sounds like a good 'ol southern dish. Are you sure you don't live in S. Carolina?

Nope, not in SC, but I did spend a fair few of my formative years in Alabama. Which is why, at some point in this week, I'll be having fried chicken, mashed potatoes and gravy, and fried okra.

Can you use cream gravy for poutine?

@Hylian did you make the gravy from scratch? Sautéed mushrooms in butter/oil, roux, and chicken stock?

You can use a cream gravy and yes I did make it from scratch although I used mushroom bouillon instead of chicken stock because I am a vegetarian. :)

sweet cornbread or un-sweet cornbread?
If eating with the meal, un-sweet cornbread with a smidge of jalapeno pepper. I also make my cornbread with diced red and green bell peppers and creamed corn.

If it's after the meal, we go with the sweet cornbread and molasses.

Creamed Corn makes it sweet. :(

The correct answer is cornbread should have no sugar at all. Eating it with butter and honey or molasses is acceptable after the meal.

If your cornbread is sweet then you might as put some frosting on it. :rage:

We use a sweet corn (yellow/white hybrid) but don't add sugar. Much, much better than bland cornbread.

Always a little sweet. My relatives in AL used to always make it slightly sweet. My grandmother, who was raised in NJ and married into the AL family, always made hers un-sweet and it was the worst, bitter, dry cornbread you'd ever taste. Thinking back on it, it reminds me of what lembas looked like in the LotR movies.
