No pics, but we made a Thai-inspired coconut broth with pan-seared cod. It was too tangy and sweet. If we try it again, I'd cut back on the tamarind paste and the lime juice. Here's the source.

That Lasagna looks really delicious.
I do find it amusing that lasagna sheets in America are wavy, while in Europe they are flat.

I used lasagna sheets a few days ago myself...for the first time ever.
But as my son doesn't like lasagna, I made chicken-broccoli lasagna roll-ups. They really didn't look that amazing, so I didn't post pics at the time. Everyone was super hungry, so I didn't take the time to put it under the broiler to brown the cheese on top.
My son...didn't like them either. He said something about having solid cheese on top, but cheese sauce on bottom made him feel like the cheese was spoiled. ¯\_(ツ)_/¯

We made braised pork country-style ribs with guajillo, hatch, and poblano peppers. So good. Made tacos out of it.

Her: “We are having...<pauses> rosemary- & peppercorn-crusted pork tenderloin along with asparagus with goat cheese.”
Me: “Huh. So what’s in it?”
Her: (without missing a beat) “Oh, you know...flank steak rubbed with thyme alongside some Brussels sprouts.”
I love her. So much.
